You also need to add the file to the customsettings.ini file.  Find one of 
Johan's blogs.

Hey Guys,

i need your help over here... I’m using MDT2012 and USMT5.
I successfully setup USMT to capture the User’s Desktop, Fav’s and so on.

However, I need to capture some additional “custom” files + folders.
As for my understanding I just need to place a new XML file in the 
“DeploymentShare\Tools\x64\USMT5” folder – correct?

If so, how should the XML Look like e.g. to migrate a folder and its content 
named “C:\test” ?
I’m currently not able to find a useful information on the web…
