BTW I've tested with that version and the WET worked  fine as well.

ADK 8.1 uses USMT 6.3???? In my deployment share the directory name in 
Tools\x86 is USMT5. I upgraded MDT, CM and ADK yesterday. Should that directory 
have changed to USMT6? My the USMT version did not update as I think it did?

Haven't tried, but you can capture with USMT 5.0 and restore with either USMT 
5.0 or USMT 6.3 (ADK 8.1)

Is anyone else capturing user state with USMT 5.0 and restoring it using 
Windows East Transfer?

Or better yet is anyone capturing user state with any version of USMT and
