All of that can be accomplished pretty easily with just a little scripting (usually mounting the default user registry and making the changes) or Group Policy Preferences.
I spend a lot of time in my previous gig customizing the default user profile using CopyProfile. Once configured, you will need to add the CopyProfile tag in your unattend.xml file.
