giffgaff seem (I'd never heard of them, and they do look interesting to us UK folks) to be UK oriented. The Republic of Ireland doesn't seem to be mentioned separately, so I'd've assumed it fell under "Roaming in the EU and other selected countries"; wouldn't it? Does giffgaff's unlimited offer extend to Eire?! Anyway, a new SIM doesn't help us N900 toting freaks who want to be contactable via SMS and voice as normal and don't have any service like Google Voice to help us out - unless it's put in a MiFi (or similar).
