Yes, you can compute the field spectrum using a single point. You can either use get-field-point and compute the spectrum yourself, or use the built-in DFT functions (meep::fields::add_dft_pt). Or just compute the flux at a single point.
Whether there is a "disadvantage" to this depends on what you want to compute. If what you want is the Fourier transform of the fields at a given point, then obviously that is what you want to compute.
If what you want is the transmitted power, on the other hand, then using a single point is only appropriate if the structure is single-mode (e.g. a single-mode waveguide). That is the only case in which the power is proportional to the field at a single point.
