In PC slabs you will most likely define the source in exactly the same way, except that your source lies in the z=0 plane (the midplane of the slab) or, more likely, is a region centered at z=0 with a thickness similar to the slab thickness.

If the slab has z=0 mirror symmetry, there are even/odd symmetry modes analogous to the TE/TM in 2d, and which are excited by the same types of sources. Even if it doesn't have z=0 mirror symmetry (e.g. if it sits on a substrate), the modes divide into approximately even/odd types which are still mostly excited by the same types of sources.

Ultimately, however, what type of source you want depends on what kind of mode(s) you want to excite.
