I wish it was unnecessary, but this does sound reasonable. We'd
probably just copy gedit's interface for this. Could you file a bug
please?

That's actually a really good idea, at least when we know we're in
merge mode, and really should cover almost all of the cases where
we're currently picking the wrong language. There's also additional
sniffing from GtkSourceView that we could be doing, though in my
experience it's somewhat unreliable.
