Paul,
I don't know the specific wiring for a VDO tacho but as a good guess the +ve
will go to 12v ignition (on a 510 the 12v input to the ballast resistor),
the -ve will go to the -ve side of the coil. The other wire will go to
either a light source (any chance it says L) or to earth. You can't hurt a
tacho wiring it up wrong, but of course it will only work properly when you
get the right combo figured.

Give it a try and see. Something I just thought of, colour of the wire
usually gives you some hints on what they're for. The usually colours are
Red (+12v ign feed), Green (-ve coil sense), Black (earth) and White (light
source).
