The only problem in converting a 4 door to a 2 door is that you would always know it is not a 2 door and it would not be worth as much as an original 2 door.
I would think the cost of changing it over and getting the windows, trim etc would be fairly expensive. Moving the B pillar is probably not as easy as it sounds either. You would have simply done a lot of work which could have been put into creating a fantastic 4 door.
