Does anyone know for sure if aluminium and brass react in water (coolant)? I am going to use a brass thermo fan switch in my plastic radiator tank and it needs an adapter. I was going to make it (the adapter) from aluminium but I am not sure if this will cause electrolysis.

Aluminium is anodic to brass and so will corrode in preference in a suitable solution (eg plain water).  But if you use a suitable corrosion inhibitor the reaction rate is slowed dramatically.  I don't bother with coolant's as such, but have used the Castrol radiator corrosion inhibitor for years without problems.
