It's going to vary on hardware, kernel, OS, etc and moreso on the active number of requests per second. Idle connections just waste ram. I can't really give you a great answer since I have no idea where you want to scale up to. I can get memcached to easily do 400,000 gets per second, and have seen it do quite a lot of traffic with 40,000+ connections. Give it a shot on your setup and see what happens, and if something's slow you can tune it.
