If you look closely at the instructions, is sending a message to an email
address that ends in "-subscribe", so to unsubscribe is sending a message to
the same address but ended in "-unsubscribe" instead. Actually, if you see the
headers of the emails received from the mailing list (see
http://email.about.com/od/mozillathunderbirdtips/qt/How-to-View-Complete-
Message-Headers-in-Mozilla-Thunderbird.htm for instructions), there is one
with the address so you can copy and paste.

But yes, is not obvious. Most mailing lists add a footer to to the bottom of
the content with more clear instructions.
