Also, you will find that what appears to be "soft serve" ice cream is really 
frozen custard, another delicacy.  This is made on site daily at Kopps and other such 
places (there are many!) in various flavors and served with related goodies.  Kopps 
publishes their list of flavors of the day monthly so you know what days to go for your 
favorite flavor.
