I used the $2 oil sucker and jammed the suction hose way down in the pump, got out as much as I could, then refilled with ATF. Did that again a couple days later figuring that got most of the old out, mostly new in. After the second time it looked pretty clean a couple days later when I checked the level.

Is there any way to flush out all the old p/s fluid and replace it with

reservoir draining replaces only a small amount, the pipes and box would
still have old fluid contaminating the fresh fluid.

On MOST Mercedes, draining the reservoir and refilling it changes about HALF the fluid. The total content of 123s PS system is 1.4 liters (0.6 liters on 124/201).

What model and year car do you have that doesn't do that?

YOU can of course loosen the low pressure line while pouring fresh fluid into the reservoir (you DON'T want it to go dry). I prefer to simply change what's in the reservoir every 10/20kmi. That results in about 90% being changed every 30-60kmi. Or you can change what's in the reservoir 3 or 4 times in 3 or 4 days (so each batch of fresh is completely mixed with what's in there) and that will replace about 90%.
