Alzheimer's is probably more mad cow than some brain degeneration on its own. I do not think that bison are omnivores, so should not have an issue unless you gave them some burgers or cow chow.

Hmm.  But can they catch mad cow?  I've heard rumors that there are
probably human cases in the U.S. that we don't know about, because
coroners are refusing to autopsy patients that are suspected of having
it.  They're too afraid of the prions, which can't even be killed with
an autoclave.
