So, I can use the 15X7 wheels.  Tire rack has some very nice aftermarket
wheels.  They have a +23mm offset. I guess that is the appropriate
offset? How would I know?

They should fit with an ET between 21 and 25. Ask the guys at Tire Rack. They usually know exactly what will work.
