When reading the W124 info page they said Fuel Injectors need replacing on average at around 100k miles. SO I took a look at Rusty's website to see how much that'll cost and I found the "Injection Nozzles" can be bought for ~$31 each Vs $56 for the Diesel Injectors. So, can the Inj Nozzles only be replaced (at 1/2 the cost) or is it false economy *not* to go ahead and replace the whole injector?

You can of course replace the nozzles. Then you must calibrate the injector and set the opening pressure. Takes 10-15 minutes per injector providing you have the pop tester and a complete set of the shims that are used to set pressures. Most techs that don't specializer in injector and injection systems have stopped replacing nozzles as the time required to do the job requires that they charge more than if they buy injectors that have been rebuilt by a specialty supplier. After you have replaced the nozzles and calibrated a dozen or so injectors, you should be able to turn out injectors that will perform reliably.
