The check valves would thread right into this compressor's heads and then the 
existing piping could be re-attached.  If I go 3/4"npt then I would have to 
adapt from 1/2 to 3/4 and back to 1/2 for the rest of the piping.  That may negate 
the benefits of a larger check valve.  Right?

Yes, it would work. The extra, dead volume of the piping to connect to the
check valves will limit ultimate pressure and maybe volume.

You might want to use a larger size than 1/2", too.
