It's because you are not supposed to say "chinese" -- "Asian" is the 
correct term.

Funny story:  My SIL tutors freshman football players at a large 
university.  She is sorta "mom" to a lot of them, she has 4 boys of her 
own so these guys are just extended family in a lot of ways for her.  
Many of them have very little experience in social aspects (for 
instance, she helps them select clothes to wear to publicity events and 
such -- khakis and polo shirts are new territory for them).  One of them 
(a very large young African American gentleman from a small town in some 
backwoods part of the state) comes to her one day all upset.  He tells 
her he was riding the escalator somewhere and sees this "Chinese dude" 
coming the other way, so he asks him out of the blue, in passing, for 
some reason never made clear, "How do you say 'ugly' in Chinese?"

So the football player says the guy looks at him "funny" and says, "I 
don't know, I'm not Chinese.  How do you say 'stupid' in African?" .  
The football player was upset, "He's a racist!  He shouldn't be saying 
things like that!"  So then she, unsuccessfully, attempted to explain to 
this young gentleman why the whole thing was sorta racist and offensive, 
but he was not buying it.  She also has to try to help them get 
edumacated, but that is a whole nuther set of stories.
