Off the cuff, I think this should do the trick:

repeat with i = 127 to 255
    replace numToChar(i) with empty in myField
end repeat

you could write this as a function & call it when you need it, 
passing the text & the start & stop character numbers to be deleted, 
e.g.

function stripGarbage(stripTxt, startNum, stopNum)
   repeat with i = startNum to stopNum
       replace numToChar(i) with empty in stripTxt
    end repeat
    return stripTxt
end stripGarbage
