On the admin page for the Contact Us (or any other form), there's the field "Send email to others:" - you can add a comma separated list of email addresses here, and the form will be cc'd to these addresses. (You can also choose via the "Send email to user" checkbox whether or not the person who completed the form is sent the contents of it or not). I'm not sure how or if you can put in a variable here that refers to an email address in settings.py, but the easiest solution would be just to add the admin's email address to the list of "Send email to others:".
