Realing that this is not the answer you were looking for:

  I don't.  I assume that the message was formatted by the sender and
that the sender had <whatever> good reasons for the formatting style
he chose.  As many of the lists I host I run are technical with
(pseudo-)source code snippets or ASCII diagrams regularly traded, I
can't afford to reformat posts -- exact layout is too important.

That said, I also expect the list moderators to enforce the base rules
of acceptable mail formats, encluding keeping the prose body within 78
columns.
