Encrypting E-mail or removing address from archives

Does anyone have a method for doing one of the following:

1. Remove the e-mail address from the archives.  So instead of showing:
From: "Matthew Andersen" <[EMAIL PROTECTED]>  I could have it show up as:
From: Matthew Andersen  Eliminating the actual address completely.  

2. Encrypt the address.  So instead of showing:
From: "Matthew Andersen" <[EMAIL PROTECTED]> I could have it show up as:
From: "Matthew Andersen" <mander#replacewithat#logi.net>
