That assumes they are in the same filesystem. Put /mnt back in there and try to mount /mnt/windows. You should see "access denied by server while mounting" as an error. nfs is a very low level protocol for mapping unix like filesystems, and only works partially with fat - http://nfs.sourceforge.net/#faq_c6.
