I just built another machine for it (though it doubles as my media
server, and vm host). You don't need much CPU, but you do need plenty
of disk.

I've not used it directly in that environment. You can either connect
to windows via SMB or by installing rsync+ssh in cygwin. I've seen both
approaches done on the backuppc-users mailing list.

Anything that's a file can get backed up. However, be careful of
backing up disk images of virtual machines that are running. You may
very well get an inconsistant state, and life will not be good.
