I ran across this on via the new york outdoors blog - http://mobac.dnsalias.org/. It's an open source java app that builds gps data files from various online maps systems and their tiles. This includes open street maps and terraserve usgs topo maps, as well as some proprietary services. It seems to support a large number and variety of hand held gps devices.
