At dinner we discussed which directories should be backed up on what OS.
This is important to understand if your a Sys-Admin and need to backup Linux 
Servers, Windows PC and your bosses Mac Book Pro etc.
Here is my list, please comment ( responsibility ) 

Linux:
     /home - user home directories
     /root - root home directory
     /etc - system config
     /var - logs, app data, databases etc.
     /boot - grub config if you edit it
     /srv - if you have it
     If unsure the safest way is to backup everything except the following...
     /dev/
     /proc/
     /sys/
     /lost+found/
     /media/ and /mnt/ - assuming you backup attached disks separately

Windows
     It's safest to backup everything on the c:\ drive except for
     /Windows   -    This will have to be re-installed no sense wasting room    
     /Program Files  -   programs will have to be re-installed**
     /Program Files (x86)
     ** There are exceptions, only an administrator level account can write in 
these dirs.
     so configuration/user data should be in /Users but an application will 
break the
     rules so know what is installed and how it works to understand if it needs 
a backup

Apple OS/X
     Not sure about this maybe someone can add it?
