Let me rephrase my question:
Why do we not set all pointers for sensor-specific functions at once
(immediatly after we get the sensor from sensor_probe)?

Which ones would those be? Is there something sensor-specific which
isn't in the sensor_info struct which should be, besides the things we
know about already? Any static information we know about the sensors
should be in sensor_info, IMO.

I agree that anything non-static that is sensor-specific should either
be done at the point that we discover which sensor we're dealing w/ or
should be added to the sensor initialization functions.
