Consider (for example):

        The £ was worth 2.50 dollars
or:

        £1 was worth 2.50 dollars

I'd say the latter, but if, not, try paring away whatever you consider
unnecessary, and see at what point you'd stop.

Note also my recent message about the reasons for needing to identify
the 'symbol'.
