Where are you located ?.

A DC Electronic Level Controller will solve the problem., it is simple to
make.

The size motor you are talking abut seems that will have brushes that will
wear out for periodic maintenance.
There are other solutions for your problem and it would be a Brushless
Permanent Motor or an Induction motor converted to a generator.
With an Induction motor/generator you as well have the possibility of using
the AC voltage generated -- directly

Can you describe your plans for the  Hydro system, including the water
volume, head and other available parameters ?
