Regarding the link, looking at the "Fuel Burn" table, I assume the “Total” column should be labeled “Average” (of 2020-2025). Beyond that, the 737-700 numbers look goofy. United puts 128 seats on the 737-700 versus 166 on the 737-800, roughly 30% more seats. For Southwest, the numbers are 143 versus 175, roughly 22% more. If they flew them on routes with the same distance as the 737-800, fuel burn on the 737-700 should be no more than 1.71 for UA and 1.62 for WN, without considering any savings from the lighter airframe. That the numbers for the 737-700 are so much higher suggests they are based on a much shorter average stage length than the 737-800. That’s not too surprising since I think both airlines tend to use their 737-800s on longer routes. WN’s Hawaii flying is mostly on the 737-800 and 737-8; UA tends to use the -800 and -900 (and MAX versions) on midcons, transcons, and to Hawaii and beyond.
