We can specify more than one currency under
AccountingRules.AdditionalCurrencyCodes in
applicationConfiguration.custom.properties, for example:

AccountingRules.AdditionalCurrencyCodes=THB,VND,CNY

I have tried this and the loan product page displays multiple currencies in
the currency dropdown.
