It breaks the original DKIM signature on submissions because DKIM is designed to break when mail is re-processed and re-sent to a mailing list.

A new, valid, and properly aligned DKIM signature is applied to each message as is sent out to the list.

would it not be simple to not do this ?

It would not be simple to not break incoming DKIM signatures and retain desired functionality of the mailing list.
