I also manage Email (with Mimedefang) for a medium sized company which gets (and filters) about 2500 pieces of spam per day.

and the spam affects her work, which these days is done almost
entirely via email. So... I would love to get to a 99-100% spam block rate,
where now we block 80% or so.
Are you using spamassassin? SpamAssassin with Bayes and "auto learn" should get you much closer to 99% than 80%. If you aren't I could certainly help set up SpamAssassin if needed.
