Then you did something bizarre, sendmail does not suddenly stop 
recognising unknown users because you installed a milter.

Well, it isn't typical. You might try commenting out the "Xmimedefang"
and the "O InputMailFilters" lines in your sendmail.cf file, and restart
sendmail to see if that does bring back the 550 errors. If it does,
then you made some other configuration change that causes this.
