If the package is at all properly set up, /etc/mail/mimedefang-filter should be a config file, and so will not be replaced on upgrades. The new mimedefang-filter will instead be created as mimedefang-filter.rpmnew.

IMO, anyone blindly doing automatic updates on a server is asking for trouble anyway.
