Perhaps except mac, you will see that multimedia (audio/video) will be
problematic.
Furthermore, you will learn that a lot of code has become buggy: it is
quite linux-x86 orientend and will break more or less the more you
deviate. If you take care and report bugs (or patch yourself) you will
get further.
PowerPC and Sparc may be your best bet, followed by MIPS. HP-PA has
always been a bit more difficult in my experience, also because GCC had
troubles, thus you added problems to problems. A lot was fixed, but
perhaps broke again.
GNUstep will work quite well on most architectures ;)
