Thanks to all who responded. I was (and still am) having a rough time of it (ill) and not thinking too clearly. I'm slowly getting to grips with Postfix and think I should have it working as I want it, before too long.
The problem that I was having was down to nothing being created on the disk (only in the MySQL db) when I was setting up new domains and mailboxes using the postfixAdmin web app. I've decided that if I am going to really get to grips with this, I should be setting it up manually. It's thanks to having a fluffy web interface on my Debian box, that I have such little understanding of Postfix, at present. I've also ordered the No-Starch 'Book of Postfix', to help me along the way, as their books can actually be read, rather than just used as a reference. I thought I'd post this, for the benefit of other novices, to point out that there is _no substitute_ for rolling up your sleeves and getting down and dirty with the software.
