You don't uninstall gtk. pkg_add supports replacing existing packages with newer versions, and that was already working in 3.8. Most of us who build packages all over the place seldom reinstall our machines from scratch. If you were to switch to 3.9, there are some even nicer options available now, like download binary packages by default and build them from source only if they're not available for download.
