Postfix is easier to get working as it's just a pkg_add. I use it on most of my MXes (since it was called vmailer) and find it fairly low hassle. For qmail you need to start with figuring out which version to use. The original hasn't been maintained for a long time; it's fairly common to use one of a handful of distributions with various patches applied...
