Agreed Dovecot is a safe, sane, and secure choice and will give you POP3 (eew) and IMAP. squirrelmail you need to make sure to keep up on updates with that guy, but seriously id look into RoundCube Mail over squirrel it has a package and will also need php-fpm or some other setup to run PHP on nginx.
