Logging to STDERR with "smtpd -d" works nicely, but a dedicated log file would even be nicer.

On Arch linux opensmtpd logging is handled via systemd by default.

If journalctl does not suit your needs then I think you would need to install syslog-ng in tandem with systemd to accomplish your goal.
