But how can I retrieve the MPEG2s from the SVCDs if I want to use them
 later in other projects?
I just learned that I can use VCD Copy X to rip the tracks off of a VCD or SVCD as *.dat files. I renamed the *.dat files as *.mpg and they seemd to be OK.

So is a DAT file the same as a multiplexed MPEG2 file in this context?

I also found a nice utility MacMPEG2Decoder which can decode and scale, crop or pad the MPEG2 as QuickTime files.
