The ones I consult are:
Digital Video and HDTV by Charles Poyton (ISBN 1-55860-792-7)
Digital Video Compression by Peter Symes (ISBN 0-07-142487-3)
Video Demystified by Keith Jack (ISBN 1-878707-56-6)
Despite the somewhat funny title ("Demystified") the last one is
an excellent reference for video standards. Want to know what PAL-M
is or how NTSC and NTSC-J differ? That's the book to have. Bit
layout of a MPEG streams are very well defined and laid out, and so on.
Charles Poyton has been around video for eons and is frequently
cited as an expert.
None of the above get into software encoding per se - i.e. you won't
find any sample code for example.
If you're dealing with DVDs at all then THE book to have is James
Taylor's "DVD Demystified". It's slightly dated (I keep hoping he'll
come out with a 3rd edition soon) but a valuable reference about
DVD issues. The FAQ is online at http://www.dvddemystified.com
and is what I consult if I'm away from the bookshelf.
