Mark, I flushed and filled my power steering system this summer. I loosened the return line (suction side) hose clamp on the power steering pump and let it drain out. This will remove most of it. I actually did this when I flushed and filled the cooling system, because the connection is right next to the thermostat housing. I believe for best results you should fill with a proper synthetic hydraulic fluid. I used Pentosin CHF S11. You can get a can from Adirondak for less than ten dollars (1 can is enough). This stuff is green and did not resemble the previous contents, so I'm sure it was time for the refill. I believe the manual also states that you can alternatively fill with ATF, but I would not recommend.
Your intermittent power steering while autocrossing was probably fluid starvation to the pump. When you refill, fill all the way to the max. line.
