Check all the obvious places for leaks but don't assume the new M/C is not
leaking.
After I did what you did on my Rabbit Resto Project, I had the same leak
problem you describe.
In my case it WAS the brand new M/C leaking on me. That was a Royal PITA
since it occurred
after I had re-assembled the engine engine bay and it was clean enough to
eat off of.
That made changeing the M/C without spilling any brake fluid on the fresh
engine compartment paint
and new/restored engine components a real challenge.

BTW, did you re-use the brake lines that connect to the M/C or did you
replace any of them?
If you replaced them, hopefully you were able to flare the ends properly
otherwise that could be
a source for a leak. BTDT on my Rabbit Project as well.
