Change the thermostat..  Even tho it is located in the water pump, you have
to drain the coolant out anyways.  Just change it..  (unless Matt meant
"can't see why you wouldn't change it")

The headgasket kit contains every gasket necessary to R&R the head -
meaning the headgasket itself along with all water jacket gaskets,
valve cover gasket, exhaust and intake manifold gaskets and so forth.

Thermostat is located in the water pump - can't see why you'd want to
do it at this time.  New coolant hoses would be nice at the same
time.
