Marko,
Adapting the default style instead of filtering the osm data is one of 
Lambertus' goals. We are working on this already: 
http://forum.openstreetmap.org/viewtopic.php?id=13257
It will be introduced as soon as Lambertus is ready with his new server. I dont 
think it's a good idea to strip down the default styles and use layers instead, 
because they don't work in Basecamp/Mapsource.
