Anything newer than 18 months should fit the bill for recent gaming servers.
If you hit any problems with libc remember to install libc-compat libraries
for the distribution you are choosing.

If you plan on installing Ubuntu stick to the latest LTS server edition. Do
NOT install a desktop especially if the rackmountable server will be
colocated at a local ISP.
