Actually, there can be occasionnal boot-firmware upgrades.

I don't think GNU/Linux works yet on the ipod touch or iphone. I highly
doubt it already works on the ipad.
And of course, in the case of the iphone, your carrier might refuse you
access if your iphone is not running the expected software.
